Serves 4-5 persons
Au gratin is a French method of oven baking, where you sprinkle your dish with breadcrumbs or grated cheese, and brown the top in a hot oven. It literally means "by grating" in French, or "with a crust" from the verb gratter, "to scrape, scratch, or grate".
This is a relatively easy way to prepare vegetables and have a nice, warm family meal. Vegetables are hidden in the tray together with lush melted cheese, so its a dish that kids can eat without realizing that they are eating veggies!
And well, for those who know me, I had to add a Greek touch to this recipe by using Manouri cheese, to our palates delight!

Suitable for lacto-ovo Vegetarians

INGREDIENTS:
Ingredients for the vegetables:
400 gr / 14 oz Zucchini, grated
300 gr / 10.5 oz Leek, finely chopped in rounds
200 gr / 7 oz Greek Manouri cheese (altern: Feta cheese)
4 tbsp. / 60 ml Olive Oil
Ground Salt and Pepper
Ingredients for the Bchamel sauce:
1 lt. / 4 cups Fresh Milk, semi-skimmed, very HOT!!
100 gr / 3.5 oz / a bit less than 0.5 cup Butter or Margarine
100 gr / 3.5 oz / 0.8 cup All-purpose Flour
2 medium Eggs
1 tsp. ground Nutmeg
1/3 cup / 100 gr / 3.5 oz Greek Strained Yoghurt
100 gr / 3.5 oz / almost 1 cup grated Gouda Cheese (altern: Graviera)
50 gr / 1.75 oz / almost 1/2 cup grated Parmesan or Pecorino cheese
Ground Salt and Pepper
