Steamed Stuffed Tofu Puffs
Ingredients:
Serves 4 pax
-------
Mix the following together
-----
250g (8.8 oz) minced pork (can be replaced with minced chicken or beef)
1 stalk of spring onion (chopped finely)
25g (0.88 oz) carrots (chopped finely)
2 pieces of dried Shitake mushrooms (rehydrated & chopped)
1 tablespoon oyster sauce
2 tablespoons light soy sauce
1/2 teaspoon sugar
1 teaspoon sesame oil
A few of white pepper
2 tablespoons cornflour

Fill the stuff above in the following

12 pieces of tofu puff (weighing 65g in total)

Sauce
-----
3 pieces of shallot (chopped)
2 cloves of garlic (chopped)
0.5 cup (125ml or 4.23 fl oz) water
1 tablespoon oyster sauce
1/4 teaspoon of sugar
1/2 teaspoon premium dark soy sauce
Some cornstarch solution
1 tablespoon Chinese cooking wine (Shaoxing Huatiao wine)
