You won't believe these aren't eggs! Indian-Mexican Tofu Scramble! #mycookingjourney2021

Can you believe it's not scrambled eggs? This is an easy tofu scramble recipes that combines elements from Indian and Mexican cooking to deliver a cross-continental culinary cruise! That's right, we're going to show you how to make NOT scrambled eggs with one of these dairy free egg recipes! It makes an easy vegan breakfast, but even if you're not vegan, it still gives you a very healthy breakfast recipe that you can feel good about knowing it's plant based.

Ingredients:
1 package extra firm tofu
2-3 cloves minced garlic
1/4 - 1/3c diced onion
optional: 1/4c died capsicum (pepper), 1/2 jalapeno diced (or to taste)
1/2 teaspoon turmeric
1 teaspoon chilli powder
1 teaspoon graham masala
1 teaspoon cumin seeds (whole)
fresh ground black pepper and sea salt, to taste
1 tablespoon avocado oil

Steps:
drain one package of extra firm tofu, then place in a towel between two plates, pressing to get as much water out as possible
preheat your oven to 350F / 175C
preheat an OVEN SAFE pan on the stove on medium-high heat with 1T avocado oil
break up the block of tofu into crumbs with your hands. add the turmeric, black pepper and salt. Mix together with a spatula (not hands!) to evenly distribute.
add the cumin seeds, graham masala, chili powder to the oil and coat. cook until cumin seeds pop / spices are fragrant
add the onions, stir in the spice and oil and cook a few minutes
last add the garlic and cook for 1-2 minutes
finally add the tofu crumble and cook for a few minutes, stirring
pop in the oven for 3-5 minutes
