MEADOW SOUP - Traditional Turkish Yogurt-Rice and Mint Soup

In this episode, I'd like to share with you, my easy version of 'Meadow Soup', a traditional Turkish soup.
If you have leftover rice and chicken, and wanna try
something new, this recipe might be for you.
It is extremely tasty and very easy to make!

INGREDIENTS:
1 cup leftover rice (at room temp)
1 cup full fat plain yogurt
1/2 cup shredded chicken or 5 cups chicken stock
Dried mint
Salt&pepper
Olive oil

DIRECTIONS:
Heat 2-3 tbsp of olive oil over medium heat in a pan.
Add 1 tbsp mint flakes and cook 1-2 minutes by stirring.
Add chicken for using plain water to substitute for chicken stock.
(or use chicken stock instead)
Add 5 cups of water (or chicken stock)
Add a pinch of salt&pepper and bring the water to a boil.
Pure the chicken using an immersion blender.
Spoon a few tbsps of the hot water into the yogurt to warm it,
then stir the yogurt into the pan.
Using the immersion blender carefully, pure the soup until very smooth.
Add leftover rice and stir.
Add 1 tsp (or to taste) salt and freshly ground black pepper.
Bring it back to a boil, cook 2 more minutes and that's it :)
