Yakhni Pulao Recipe | Mutton Yakhni Pulao Recipe by Cooking with Asifa

Beef yakhni pulao recipe is a rice dish made by cooking rice with meat, Broth & yogurt. Yakhni Pulao is served with Raita & Salad.
Ingredients:-
Oil:
- Clarified Butter/Desi Ghee (1 cup/250 ml)
Meat:
- Beef / Mutton (1 kg)
Vegetables:
- Onions 3
- Cloves 5
- Garlic 1
- Ginger 1
- Green Chilies (3)
- Crushed Green Chili (1 tbsp)
Spices:
- Salt
- Cloves (4)
- Cinnamon stick (2)
- Black cardamom (2)
- Green Cardamom (4)
- Cumin Seeds (1 tsp)
- Fennel seeds (1 tsp)
- Black pepper (1.5 tsp)
- Nutmeg & Mace (1 pinch)
- Bay leaves/ tez paat (2)
- Coriander seeds (1.5 tsp)
- Persian Cumin Seeds/Caraway (1 tsp)
Others:
- Tamarind
- Yogurt (1 cup)
- Kewra Water (1 tsp)
- Rice (750 g/ 3 cups)
- Ginger Garlic Paste (2 tbsp)
Recipe:-
- Take a cotton cloth, place cinnamon stick (1), black pepper (1 tsp), fennel seeds (1 tsp), cloves (4), coriander seeds (1.5 tsp), green cardamom (3), black cardamom (1), bay leaf/ tez-paat (1) in between & join all ends of corner to make potli.
- In a pressure cooker, add beef (1 kg), water (5 cups), salt (as you like), 3-inch ginger (1), garlic (1), onion (1), cotton cloth stuffed with spices & cook with sealed lid and whistle for 15 minutes approximately.
- Separate meat & broth in two bowls.
- Heat clarified butter/ desi-ghee (1 cup / 250 ml) in a pan, fry thin sliced onions (2) until golden-brown.
- Take some of the fried onions in a separate bowl & set aside.
- In the pan, with half of fried onions add cinnamon stick (1), cumin seeds (1 tsp), Persian cumin seeds/ Shahi jeera (1 tsp), bay leaf/ tez paat (1), black pepper (1/2 tsp), green cardamom (1), black cardamom (1), water (1/2 cup or as you like), cover the lid & cook for few minutes.
- Add ginger garlic paste (2 tbsp), chopped green chilies (1 tbsp), beef, well beated yogurt (1 cup) & stir-fry well.
- Add broth(4 cups),water (1 cup) & cook till it boils to add rice (3 cups/ 750g) with tamarind pulp.
- When rice is cooked, water dries out, add nutmeg n' mace (1 pinch), kewra water (1 tsp), green chilies (3) & steam cook rice.
- To steam-cook/ Dum : Place the cooking pan over laughter on a medium flame and cover lid with help of aluminum foil/towel tightly for 15-20 minutes approximately.
- Enjoy Beef Broth/Yakhni Potli Pulao!
