This video is a record of my making xiao-long-bao. Its like a challenge?!
Xiao-Long-bao is a juicy sac of aspic and ground pork.
When I went to Taipei, I ate this and I wanted to make it one day.
This recipe is based on 2 Chinese food blogs and it was a tough journey.

In the video, I tried making aspic using pork skin, but it was too complicated.
So in another attempt, I tried mixing gelatin in beef bone-broth and it was a lot easier.
I made a few attempts and although I couldnt recreate it 100%, it was still delicious.
As for the wrapper, you need to make it thinner than in the video(it becomes thicker in the steamer.),
if you want the juice to show through.
If you are Chinese, tell me what I can do to make it authentic. :)
