Making the perfect cake batter is the most important step of making any cake. Learn how to make this versatile eggless wonder cake batter with the perfect texture and fluffiness.

EGGLESS WONDER CAKE BATTER

Ingredients

½ cup yogurt
½ cup castor sugar
¼ cup oil
1 tsp vanilla essence
1 cup refined flour (maida)
½ tsp baking powder
½ tsp baking soda
¼ cup room temperature milk

Method

1. Preheat the oven at 180℃.
2. Take yogurt in a large bowl. Add castor sugar and beat with an electric beater till the sugar melts.
3. Gradually add the oil in a thin stream while continuously beating the mixture till well combined.
4. Add the vanilla essence and mix.
5. Sift the refined flour, baking powder and baking soda directly into the bowl and gently fold in till a smooth batter is formed.
6. Transfer the batter into a greased round 6 inch round cake tin. Tap it a few times to remove any air bubbles, place it in the preheated oven and bake for 25-30 minutes.
7. Bring the cake out of the oven and allow to cool slightly. Run a knife along the sides of the cake tin and gently de-mould it on a wire cooling rack.
8. Slice or use as required.
