I will prove to you that there can be a healthy sugar free cookie that tastes good!

These are unbelievably good sugar free cookies that must be tasted to be believed! The recipe for these sugar free oatmeal cookies have so many healthy things going for them. Theyre made from all natural, non-processed ingredients. Most importantly there is no processed sugar you read that right zero sugar! Sugar free! They get their sweetness from a natural sweetener called monk fruit. They are also completely flourless, so no theres no man-made, processed white flours. Instead they use a combination of oatmeal pulp (leftover from making oat milk) and almond butter as the key ingredients of the batter. If you want to make it vegan, substitute a flax egg for the real egg. And because of the natural ingredients, they're also gluten free and paleo-friendly.

Makes about 24 cookies
Ingredients
1 cup almond butter, all natural, creamy + unsalted
3/4 cup monk fruit
1 egg (substitute 1 flax egg for vegan)
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon kosher salt
1/3 cup oat pulp, leftover from making 1 quart of oat milk
3/4 cup chocolate chips (tip: use 100% cacao chips to eliminate processed sugar!)
Instructions
1. Pre-heat oven to 350F and line a rimmed baking sheet with parchment paper or a silpat silicon mat.
2. Let your almond butter come to room temperature on the counter for a few hours. Be sure to stir any oil that pools at the top back into the almond butter. You want the almond butter to be smooth, creamy and almost pourable. You can microwave it a bit to help it get to this consistency if need be. But dont use it cold out of the fridge!
3. In a large bowl, combine almond butter, monk fruit, egg, oat pulp, vanilla, baking soda and salt. Stir everything together until you have nice thick cookie dough.
4. Add in chocolate chips and gently fold in so they are evenly distributed throughout the batter.
5. Scoop up about a rounded tablespoon of the batter and drop it on a prepared baking sheet. Repeat until you have used all the dough. You will need to work in batches or use two baking sheets.
6. Bake for 12 minutes or until golden brown on top. Cool completely before removing from the baking sheet. They are very delicate when hot, so this is an important step. Enjoy!
