Whole Wheat Pita | Sanjeev Kapoor Khazana

Make your own whole wheat pita bread at home and create a number of wonderful dishes using it.

WHOLE WHEAT PITA - (Serves - 4)

Ingredients

1½ cups whole wheat flour + for dusting
1 teaspoon fresh yeast
A pinch castor sugar
½ teaspoon salt
1 tablespoon olive oil

Method

1. Take yeast in a bowl. Add castor sugar and 2 tablespoons warm water, mix and set aside to activate.
2. Combine flour and salt in another bowl. Make a well in the centre, add activated yeast and mix. Add some water, mix and knead. Add olive oil and knead into soft dough. Cover with damp muslin cloth and set aside to prove for 20-25 minutes.
3. Preheat oven to 180° C. Dust a baking tray with some flour.
4. Dust the worktop with some flour, transfer the dough and knock back to release excess air. Divide the dough into equal large portions.
5. Dust the worktop with some flour, roll out each portion into ½ cm thick sheets and cut into roundels using a medium size cookie cutter.
6. Place them on the baking tray, cover with damp muslin cloth and set aside to prove for 10 minutes.
7. Put the baking tray in preheated oven and bake for 5-6 minutes.
8. Serve.
