Chickpeas, the versatile stars of the kitchen, can transform into delightful dishes like this buttery chickpea curry!

INGREDIENTS:

Butter Chickpea Curry

- 1 Brown Onion, diced
- 4 Garlic Cloves, minced
- 1 & 1/2 Tbsp of Mild Yellow Curry Powder
- 1 Tsp of Ground Cumin
- 1/2 Tsp of Salt
- 1/2 Cup of Vegetable Stock
- 1 Can of Diced Tomatoes
- 1 Can of Chickpeas, drained
- 1 Tbsp of Lemon Juice
- 1 Can of Coconut Milk (Full Fat)
- 1/4 Cup of Vegan Butter
- 1 Tsp of Sugar
- Rice to Serve

METHOD:

Heat oil in a frypan over medium heat. Add onion until soft. 4-5 minutes.

Add garlic and all of the spices to the frypan and cook, stirring for 1 minute.

Add vegetable stock, then add diced tomatoes, chickpeas and lemon juice, stirring until mixed well

Bring to a simmer and cook for 20 minutes

Add coconut milk, butter and sugar. Stir until smooth and vegan butter has melted

Serve with rice.
