Vegetable Kofta Curry

Ingredients for Kofta mixture:
Boiled potatoes (mashed) 1 cup
Capsicum (chopped) 1 cup
Carrot (shredded) 1 cup
Boiled peas 1 cup
Red chilli powder 1 tbsp
Coriander powder 1 tbsp
Cumin powder 1 tbsp
Paprika 1 tbsp
Salt 1 tsp
Garlic powder 1 tsp
Green Coriander (chopped) 1 cup
Green chillies (chopped) 2 tbsp
Egg 1
Bread crumbs 1 cup
Oil (for frying) as required

Ingredients Kofta Curry:
Oil cup
Onion paste 1 cup
Ginger garlic paste 1 tbsp
Tomato puree 1 cup
Red chlli powder 1 tbsp
Turmeric powder 1 tsp
Coriander powder 1 tbsp
Cumin powder 1 tbsp
Salt 1 tsp
Yogurt 1 cup
Water 1 cup + 1 cup
Fried koftas
Green coriander (chopped) as required

Directions for Kofta Mixture:
1. In a bowl add mashed potatoes, capsicum, carrot, boiled peas, red chili powder, coriander powder, cumin powder, paprika powder, salt, garlic powder, green coriander, green chilies, egg, bread crumbs and mix it well.
2. Make kofta shape and shallow fry for 2-3 mins. Set aside.
Directions for Kofta Curry:
3. In a pan heat oil and add onion paste. cook for 1-2 mins. Now add ginger garlic paste and cook for a minute.
4. Now add tomato puree, red chili powder, coriander powder, cumin powder, turmeric powder, salt and cook for 2-3 mins. Add 1 cup of water and cook for 4-5 mins.
5. Add yogurt and cook until oil separates. Add 1 cup of water and cook for 3-4 mins.
6. Now add prepared kofta and mix them well in gravy.
7. Your Vegetable Kofta Curry is ready.
