Snake gourd Stuffed Biryani

Ingredients:-

Snake gourd- 1
Basmati Rice (soaked) - 2 cups
Whole garam masala
Boiled potatoes- 2
Onion slices - 1 cup
Green chillies- 4
Ginger garlic paste- 1 tsp
Mint leaves- 1 bunch
Coriander leaves- 1 bunch
Chilli powder- 1 tsp
Biryani masala - 1 tsp
Garam masala - 1/2 tsp
Curd - 1 cup
Ghee - 1 tsp
Oil - 2 tb spn
Water - As Required
Salt - To Taste

Method:

Cut snake gourd as shown, stuff it with boiled potato which is mixed with chilli powder, salt, garam masala and coriander leaves.

Add oil in a pan add cook them on all sides for 4-5 minutes.
Remove them and keep aside.

Same pan add oil, whole garam masala, onion slices, salt and brown the onions . Then add ginger garlic paste, green chillies, mint leaves, coriander leaves, curd , chilli powder, Biryani masala, garam masala and mix it well and turn of the flame. Place sauted snake gourd pieces in the masala.
In boil water add salt, Ghee and soaked basmati rice. Mix it well and cook it till rice is 90% done. Then layer it with snake gourd masala and top it up with saffron water and coriander leaves.
Cook it for 7-8 minutes and turn off the heat.
Let it rest for 5 minutes and then serve it with raita and salad
