Vegetarian Banana Patty Recipe Banana Burger Recipe

I believe I've created a new vegetarian banana patty recipe. Or perhaps you'd prefer to call it a banana burger recipe. No meat, and no deep fried bananas like with banana fritters or pisang goreng. This is a vegetarian or vegan patty with NO BEANS! This vegetarian burger recipe is a great way to use up ripe bananas by combining them with ground oats, spice and and egg (note: you can make this a vegan burger recipe by substituting a flax egg and it can be gluten free if your oats are certified gluten free.). And instead of inflammatory vegetable oil for deep frying we're going to do a shallow fry in heart healthy coconut oil.

Banana Burgers
ingredients
(makes 4-5)
3 ripe large (black) bananas (or 4 smaller ones)
Approximately - 1 cup oat flour (will vary based on the amount/size of bananas used)
1 egg (or substitute 1 flax egg for vegan)
1/2t tandoori seasoning, or 1/4t chili powder & 1/4t turmeric
-1 finely diced jalapeno (optional for those who like it spicier)
2-3T coconut oil (for shallow frying)

Directions
Peel and mash the bananas in a bowl. Its ok if there are some smaller size chunks, it doesnt have to be a puree, in fact I think the slight difference in texture is a good thing! Add the egg and spice and mix with a fork or whisk until egg is blended. Add in - 1/3 cup oat flour at a time and stop after 2/3 - cup. Wait 10 minutes or so for some of the liquid to absorb into the oats. The final consistency you want is VERY THICK. It should not be pourable. It should drop off a spoon in clumps, but it should not be so thick that its like a dough you can shape with your hands. You want to be able to spoon it out into a fry pan and then be able to flatten it a bit. The amount of ground oats you add will depend on the size of the bananas. Add more ground oats if necessary to achieve the final consistency.
Heat your frypan to medium heat you can always increase slightly later if need be but if you go too hot initially, youll burn the patties. Add 2T coconut oil (or enough to cover the bottom of your size pan once its melted. Drop the batter onto the pan to form rough burger shaped patties and swirl the spoon on top to flatten to about a inch thick. Cover with lid and cook about 4 minutes per side until golden brown on each side. As mentioned earlier, you can always increase the heat slightly or cook longer, but if you go too hot initially, youre in trouble! If you need to make in more than one batch, add more coconut oil if necessary to be able to cover the bottom of the pan in a thin layer.
