He said that after cooking elaborate meals for weddings or other events, his whole team would be so tired and sick with the preparation of the exotic meals that they would make this Mixed Vegetable Rice quickly, with the leftover vegetables and lentils - and what a recipe this is ! My God, one needs to try it out to believe me. No masalas, no butter, no ghee!! Sheer healthy plate of yummy goodness!!So welcome to yet another of my kitchen adventures!Ingredients:Short grained rice/raw rice - 1 cupWater - 4 cupsOnions (medium) - 2Broad beans - 200 gmsChayote or Bottle Gourd/Chow-Chow - 1Potatoes (medium) - 2Red Lobia beans - 1 small cupGreen chillies - 4Curry leaves - fewSambar powder - 4 tspAsafoetida - ¼ tspAny oil - 4 tspsMustard seeds - ½ tspCumin seeds//Jeera - ½ tspBengal gram dal - 1 tspSalt to tasteMethod:Soak the red lobia beans in water for few hours or use any beans like Garbanzo or use sprouts (If you have time, soak the beans overnight)Wash the soaked beans in water thoroughly and drain of water and keep asideRoughly chop all the vegetablesSlit the green chillies and keep them wholeHeat oil in a cookerSplutter mustard seedsThen add cumin seeds/jeera and roastNow quickly add the bengal gram dhal and allow to turn goldenAdd asafoetidaThen, add the onions and saute for few seconds - no need to turn translucent or goldenNow, add all the other vegetables and the lobia beans and stir-fry together over medium flameNow add the sambar powder and mix wellMeanwhile boil 3 cups of water separatelyNow, pour the hot water to the vegetablesMix well adding saltWhen everything is boiling well add the 1 cup of washed riceAllow everything to boil together adding few curry leavesNow close the cooker with its lid placing the weightSimmer the flame to the lowest and allow to cook for 12 or 15 minutesNo need to look out for whistles from the cookerWhen the pressure subsides, gently open the cooker Serve the yummy Vegetable Rice with raitha of your choice"When you start eating food without labels, you no longer need to count your calories."Mixed Vegetable Rice“When you start eating food without labels, you no longer need to count calories”.
