Vegetable Rice
My recipe of Mixed Vegetable Rice is a very healthy one, easy one too, requiring only vegetables and lentils - any vegetables that you have at home and any lentils, sprouts, nuts etc. Everyone wants a recipe that is healthy and easy too, with less ordeal of roasting and grinding in the kitchen.
This recipe was shared once by a renowned caterer in Chennai. He said that after cooking elaborate meals for weddings or other events, his whole team would be so tired and sick with the preparation of the exotic meals that they would make this Mixed Vegetable Rice quickly, with the leftover vegetables and lentils - and what a recipe this is ! My God, one needs to try it out to believe me. No masalas, no butter, no ghee!! Sheer healthy plate of yummy goodness!!
So welcome to yet another of my kitchen adventures!
