Perfectly crispy toast topped with creamy mayonnaise, rawa and veggies, makes up for a great evening snack as it fills up your tummy and tickles your taste-buds.

VEGETABLE RAWA TOAST

Ingredients

½ medium onion
¼ medium green capsicum
¾ cup semolina
4 white bread slices
¾ cup yogurt
1 green chilli
½ medium tomato
6 tbsps Nutralite Veg Mayo
Salt to taste
Green chutney for serving

Method

1. Take semolina in a bowl. Add yogurt and mix well. Set aside for 10-15 minutes.
2. Chop the onion, deseed and chop green capsicum.
3. Chop green chilli and tomato.
4. Apply 4 tbsps Nutralite Veg Mayo on 4 bread slices.
5. Add remaining Nutralite Veg Mayo to the semolina mixture. Add the chopped vegetables and mix. Add salt and mix well. Set aside for 10 minutes.
6. Hear a nonstick shallow pan. Apply the yogurt mixture on the bread slices evenly and place in hot nonstick pan.
7. Cover and cook on low heat for 5-6 minutes. Flip, cover and cook on other side for 2-3 minutes on low heat.
8. Transfer on a chopping board and cut into triangles.
9. Serve hot with green chutney.
