Healthy one pot meal of pulao made with quinoa and fresh cut vegetables.VEGETABLE QUINOA PULAOIngredients8-10 cauliflower florets1 medium carrot, peeled and cut into diamonds5-6 French beans, diagonally sliced3 tablespoons green peas1½ cups quinoa, soaked for 1 hour2 teaspoons ghee1½ teaspoons caraway seeds (shahi jeera)1 bay leaf2-3 cloves1 inch cinnamon 4-6 black peppercorns1 star anise1 medium onion, sliced3 cups vegetable stock + as required Salt to taste1 tablespoon chopped garlic1 teaspoon red chilli powder¼ teaspoon turmeric powder1 tablespoon chopped fresh coriander leavesFresh coriander sprig for garnishing Method1. Heat 1 teaspoon ghee in a deep non-stick pan. Add 1 teaspoon caraway seeds, bay leaf, cloves, cinnamon, black peppercorns and star anise, mix and sauté till fragrant. 2. Add onions and sauté till translucent. Add drained quinoa and mix. Add vegetable stock and salt, stir, cover and cook till the quinoa is fully done.3. Heat remaining ghee in a non-stick pan. Add remaining caraway seeds and garlic, mix and sauté till garlic turns golden brown. 4. Add chilli powder and turmeric powder and mix. Add cauliflower, carrots and little vegetable stock, mix and cook for 2-3 minutes. 5. Add French beans, green peas and sprinkle some vegetable stock, mix and cook for a minute.
