Vegetable Oats Tikki | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

Super healthy tikki made with fresh cut vegetables, quinoa and oats.

VEGETABLE OATS TIKKI

Ingredients

1 medium carrot, peeled and finely chopped
½ medium green capsicum, cut into small pieces
2 tablespoons green peas
5-6 French beans, finely chopped
2 teaspoons + ½ cup roasted oats
1 cup cooked quinoa
1 tablespoon chopped fresh coriander leaves
1 small potato, boiled, peeled and mashed
2 teaspoons ginger-green chilli paste
½ teaspoon garam masala powder
1 teaspoon red chilli powder
Salt to taste
1 tablespoon fresh brown breadcrumbs
½ cup buttermilk
Olive oil spray as required
Tomato ketchup as required
Fresh coriander sprigs for garnishing

Method

1. Preheat an air-fryer to 180̊ C.
2. Take quinoa in a bowl. Add carrot, capsicum, green peas, coriander leaves, potato, ginger-green chilli paste, garam masala powder, chilli powder, lemon juice and salt and mix well.
3. Add breadcrumbs and 2 teaspoons oats and mix well.
4. Divide the quinoa mixture into equal portions, shape them into tikkis and lightly roll the edges on the worktop.
5. Dip each tikki in buttermilk and coat with remaining oats.
6. Place the tikkis into the air-fryer basket and spray some olive oil spray on top. Put the basket into the preheated air-fryer and air-fry for 12-15 minutes.
7. Put some tomato ketchup in small individual serving bowls and place in one tikki in each bowl.
8. Garnish with coriander sprigs and serve hot.
