Super healthy tikki made with fresh cut vegetables, quinoa and oats.VEGETABLE OATS TIKKIIngredients1 medium carrot, peeled and finely chopped½ medium green capsicum, cut into small pieces2 tablespoons green peas5-6 French beans, finely chopped2 teaspoons + ½ cup roasted oats1 cup cooked quinoa1 tablespoon chopped fresh coriander leaves1 small potato, boiled, peeled and mashed2 teaspoons ginger-green chilli paste½ teaspoon garam masala powder1 teaspoon red chilli powderSalt to taste1 tablespoon fresh brown breadcrumbs½ cup buttermilkOlive oil spray as requiredTomato ketchup as requiredFresh coriander sprigs for garnishingMethod1. Preheat an air-fryer to 180̊ C.2. Take quinoa in a bowl. Add carrot, capsicum, green peas, coriander leaves, potato, ginger-green chilli paste, garam masala powder, chilli powder, lemon juice and salt and mix well.3. Add breadcrumbs and 2 teaspoons oats and mix well. 4. Divide the quinoa mixture into equal portions, shape them into tikkis and lightly roll the edges on the worktop.5. Dip each tikki in buttermilk and coat with remaining oats. 6. Place the tikkis into the air-fryer basket and spray some olive oil spray on top. Put the basket into the preheated air-fryer and air-fry for 12-15 minutes.7. Put some tomato ketchup in small individual serving bowls and place in one tikki in each bowl.8.
