VEGETABLE CHEESE NUGGETSIngredients2 medium potatoes, boiled, peeled and mashed2 tbsps finely chopped French beans¼ cup grated carrot50 grams mozzarella cheese, cut into ½ inch cubes2 tsps ginger-green chilli pasteSalt to taste½ tsp chaat masala1 cup fresh bread crumbsOil for greasing + for deep fryingCorn flour-refined flour slurry as requiredDried bread crumbs for coatingTomato ketchup to serveMethod1. Take potatoes in a large bowl. Add French beans, carrot, ginger-green chilli paste, salt, chaat masala and bread crumbs and mix well. 2. Grease your palm with some oil, take a portion of the potato mixture and spread it on your palm. Place 2 mozzarella cubes in the centre and bring the edges to the centre and seal it. Shape it into a small cylinder. This is a nugget.3. Dip each nugget into the slurry and coat with dried bread crumbs.4. Heat sufficient oil in a kadai.5. Gently slide in the nuggets into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper. 6.
