Set aside.In a heavy bottom pan, heat olive oil and add in the spinach; season with salt and sauté until wilted.Add in the jalapeno and sauté for a few seconds. Set aside.Heat a heavy bottom flat pan on medium – high and pour a ladle full of batter and spread. Cook on one side, smear some oil and flip and cook on the other side.Flip again and place the spinach stuffing. Fold it and place on the serving plate.SERVINGGarnish with pine nuts and pomegranate seeds. Serve and enjoy!
