These VEGAN cookies are not only diary free but also a healthier one because they are not baked and made with healthy ingredients.

VEGAN NO-BAKE COOKIES

Ingredients

¾ cup rolled oats
¾ cup cashew nuts
¼ cup pumpkin seeds
½ tsp dried ginger powder (saunt)
A pinch of rock salt (senda namak)
½ tsp cinnamon powder
¾ cup dates
½ tsp vanilla extract
2½ tbsps raisins
Cashew nuts halves for garnish

Method

1. In a blender jar, add rolled oats and blend to a powder. Add cashew nuts, pumpkin seeds, ginger powder, rock salt, cinnamon powder and blend to a fine powder.
2. Add dates, vanilla extract and blend till well combined. Transfer into a large bowl.
3. Add raisins and mix well. To make the cookies, take a small portion of the mixture and shape it into a ball and slightly flatten it.
4. Press in the centre of the cookie to make a cavity using your thumb, place cashew nut on it and press it.
5. Serve.
