Chiles rellenos (stuffed peppers) was one of my favorite Mexican recipes before I went vegan almost 5 years ago. Today I made a vegan version with sauted veggies, tomatillo salsa (made by @decalsdomatter) and crema/tahini sauce. This was seriously so simple yet so delicious this can also be made raw your choice!

Tomatillo salsa:
tomatillo, salt, pepper, cumin, jalapeo and red onion.

Crema:
Tahini, nutritional yeast, lime, pepper, salt and water.

Sauted veggies:
Sweet potato, mushrooms, red bell pepper and zucchini. Seasoned with cumin, salt, pepper and lime.
