Easy to prepare but filling, the Primavera Noodles will be loved by young and old alike, which makes it an even more convenient choice. While this is a superbly balanced set of vegetables, you can toss in other veggies too if you prefer to.Preparation Time: 15 minutes. Cooking Time: 7 minutes. Serves 2. 2 cups boiled noodles2 tbsp oil2 tbsp finely chopped garlic (lehsun)½ cup finely chopped onions½ cup thinly sliced yellow capsicum¼ cup thinly sliced carrot½ cup thinly sliced zucchini (unpeeled)2 tbsp chopped black olives¼ cup cherry tomato halves2 tbsp fresh creamSalt to tasteFor the garnish1 tsp chopped parsley (optional)1. Heat the oil in a broad non-stick pan, add the garlic and onions and sauté on a medium flame for 1 minute.2. Add the yellow capsicum, carrots, zucchini and olives, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.3. Add the cherry tomatoes, fresh cream and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.4. Add the noodles, mix well and cook on a medium flame for 1 more minute.Serve immediately garnished with parsley.
