A quick and easy stir-fry prepared with raw bananas for a simple weeknight dinner.

VAZHAKAI VARUVAL

Ingredients

2 raw bananas (vazhakai)
2 tbsps coconut oil
1 tsp mustard seeds
1 tsp fennel seeds
10-12 curry leaves
2-3 green chillies, slit
15-20 madras onions, sliced
Salt to taste
1 tbsp ginger-garlic paste
1 tsp red chilli powder
½ tsp turmeric powder
½ tsp garam masala powder
2 tbsps chopped fresh coriander leaves

Method

1. Peel the raw bananas and cut into thick strips. Put them in a bowl of water.
2. Heat coconut oil in a non-stick pan. Add mustard seeds and fennel seeds and sauté for a few seconds.
3. Add curry leaves, green chillies and madras onions and sauté for a minute. Add salt and sauté till translucent.
4. Add ginger-garlic paste and sauté till golden brown. Add raw bananas and mix well.
5. Add red chilli powder, turmeric powder and garam masala powder and sauté for a minute.
6. Add ¼ cup water, mix, cover and cook for 8-10 minutes.
7. Add coriander leaves and mix well. Serve hot.
