A quick and easy stir-fry prepared with raw bananas for a simple weeknight dinner. VAZHAKAI VARUVALIngredients2 raw bananas (vazhakai)2 tbsps coconut oil1 tsp mustard seeds1 tsp fennel seeds10-12 curry leaves2-3 green chillies, slit15-20 madras onions, slicedSalt to taste1 tbsp ginger-garlic paste1 tsp red chilli powder½ tsp turmeric powder½ tsp garam masala powder2 tbsps chopped fresh coriander leavesMethod1. Peel the raw bananas and cut into thick strips. Put them in a bowl of water.2. Heat coconut oil in a non-stick pan. Add mustard seeds and fennel seeds and sauté for a few seconds.3. Add curry leaves, green chillies and madras onions and sauté for a minute. Add salt and sauté till translucent.4. Add ginger-garlic paste and sauté till golden brown. Add raw bananas and mix well.5. Add red chilli powder, turmeric powder and garam masala powder and sauté for a minute.6. Add ¼ cup water, mix, cover and cook for 8-10 minutes. 7. Add coriander leaves and mix well.
