Dried shrimps cooked with brinjals! This is a super easy recipe and a treat to the taste buds!

VANGI JAVLA

Ingredients

4-5 small brinjals (vangi), quartered
3 cups dried small prawns (javla)
2 tbsps oil
1 tsp cumin seeds
1 tbsp crushed ginger-garlic-green chilli
2 medium onions, finely chopped
2 medium tomatoes, finely chopped
Salt to taste
1½ tsps red chilli powder
½ tsp turmeric powder
¾ tsp coriander powder
¼ tsp cumin powder
1 tbsp malvani masala
¼ cup chopped fresh coriander leaves + for garnish
4-5 kokum petals
1 cup chopped spring onion greens
To serve
Pavs
Onion wedges
Green chillies

Method

1. Wash javla thoroughly with water for 1-2 times. Drain it into a bowl.
2. Heat oil in a kadai. Add cumin seeds and let them change colour.
3. Add crushed ginger-garlic-green chlli and saute well.
4. Add onions, mix and saute till they turn translucent. Add tomatoes and salt and mix well. Cover and cook for 3-4 minutes or till the tomatoes turn soft and pulpy.
5. Add red chilli powder, turmeric powder, coriander powder, cumin powder, and malvani masala and mix well.
6. Add ½ cup water, mix, cover and cook for 2-3 mins. Add coriander leaves and javla and mix well.
7. Add vangi, spring onion greens and adjust salt and mix well. Add ½ cup water, mix, cover and cook for 10-15 minutes.
8. Garnish with coriander leaves and serve hot with pavs, onion wedges and green chillies.
