This is a super easy recipe and a treat to the taste buds!VANGI JAVLAIngredients4-5 small brinjals (vangi), quartered3 cups dried small prawns (javla)2 tbsps oil1 tsp cumin seeds1 tbsp crushed ginger-garlic-green chilli2 medium onions, finely chopped2 medium tomatoes, finely choppedSalt to taste1½ tsps red chilli powder½ tsp turmeric powder¾ tsp coriander powder¼ tsp cumin powder1 tbsp malvani masala ¼ cup chopped fresh coriander leaves + for garnish4-5 kokum petals1 cup chopped spring onion greensTo servePavsOnion wedgesGreen chilliesMethod1. Wash javla thoroughly with water for 1-2 times. Drain it into a bowl.2. Heat oil in a kadai. Add cumin seeds and let them change colour.3. Add crushed ginger-garlic-green chlli and saute well.4. Add onions, mix and saute till they turn translucent. Add tomatoes and salt and mix well. Cover and cook for 3-4 minutes or till the tomatoes turn soft and pulpy. 5. Add red chilli powder, turmeric powder, coriander powder, cumin powder, and malvani masala and mix well.6. Add ½ cup water, mix, cover and cook for 2-3 mins. Add coriander leaves and javla and mix well. 7. Add vangi, spring onion greens and adjust salt and mix well. Add ½ cup water, mix, cover and cook for 10-15 minutes.8. Garnish with coriander leaves and serve hot with pavs, onion wedges and green chillies.
