A simple and yummy way of making the best of leftover rotis in your kitchen.

LEFTOVER TADKA ROTI

Ingredients

5-6 leftover rotis
1 tbsp ghee
1 tsp cumin seeds
4-5 curry leaves
2 green chillies, slit
¼ tsp asafoetida (hing)
1 tsp chopped garlic
Salt to taste
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
¼ cup sour curd
1 tsp sugar
1 tsp lemon juice
Chopped fresh coriander for garnish
Yogurt to serve

Method

1. Tear the rotis into 4-5 pieces in a bowl.
2. Heat ghee in a deep non-stick pan, add cumin seeds, curry leaves and green chillies. Sauté for a minute on medium heat.
3. Add asafoetida and sauté for few seconds. Add the roti pieces and mix well. Cook for 3-4 minutes on medium heat till rotis becomes hard.
4. Add garlic, salt, turmeric powder, red chilli powder, coriander powder and sour curd in the pan. Add 2 cups water and mix well. Add sugar and lemon juice. Mix well.
5. Serve hot with yogurt, garnished with chopped coriander.
