This hearty dish of bedmi paranthas is a great recipe for meals and can be served in breakfast or lunch. IngredientsWheat flour - 2 cupUrad dal - 1/2 cupOil - for kneading dough and roasting paranthasGreen coriander(finely chopped) - 2 tbspGinger - 1 inchGreen chilly - 2Asafoetida - 1 pinchCumin seeds - 1/2 tspRed chilly powder - 1/4 tspGaram masala - 1/4 tspFennel powder - 1 tspSalt - less than 1 tsp (as per taste)DirectionsGetting ready:1.Place soaked urad dal in a mixture jar, followed by green chilly, chopped ginger and grind coarsely.Making:2.Now add the following ingredients in a big mixing bowl to knead dough – flour, coarsely grind dal, salt, fennel powder, cumin seeds, garam masala, red chilly powder, asafoetida, green coriander, 2 tsp oil and mix well.3.Then add water in small portions and knead soft and firm dough. Cover and keep aside for 15 to 20 minutes to rest.4.Grease your hands with some oil and knead the dough again until smooth. Then pinch small to medium size ball from the dough and roll into round shape.5.Dust the dough ball with some dry flour and roll out into 4 to 5 inch round. Spread some oil over this rolled parantha and fold, giving it a half moon shape.6.Again spread some oil on this side as well and fold giving it a cone shape. Dust it with dry flour again and roll out little thinly in triangular shape.7.Preheat a tawa or skillet and grease it with some oil. Now place the parantha over it and let it roast until the upper sides turns dark.8.Flip the side and apply some oil over it. Flip again and evenly apply some oil over the other side as well. Keep the flame medium-low.9.Roast the parantha until you see golden brown spots on the sides evenly and the parantha turns little crispy as well.10.Stack up the parantha in a casserole or serving basket and similarly prepare the rest of the paranthas.11.Lip smacking and super yummy bedmi paranthas are ready.
