Deep fried crispy puris using urad dal.

URAD DAL KHASTA PURI

Ingredients

½ cup Tata Sampann Urad Dal
1½ cups whole wheat flour
1 tsp fennel (saunf) powder
2 tbsps chopped fresh coriander leaves
¼ tsp asafoetida (hing)
½ tsp dry mango powder (amchur)
½ tsp dried red chilli flakes
Salt to taste
2 tbsps ghee
Oil for deep frying

Method

1. Wash Tata Sampann Urad Dal with water for 2-3 times and transfer into a bowl and soak with sufficient water for 20 minutes.
2. Transfer the soaked urad dal into a processor and add fennel powder, chopped coriander, asafoetida, dry mango powder, dried red chilli flakes and salt and grind to coarse mixture and transfer into a large bowl.
3. Add whole wheat flour little by little and add ghee, mix well and knead to a stiff dough. Set aside for 15-20 minutes.
4. Heat sufficient oil in a kadai.
5. Divide the dough in to equal portions, shape them into balls and slightly flatten them. Slightly dip each portion into the hot oil and roll into small discs.
6. Deep fry the prepared puris in the hot oil till golden brown and crisp. Drain on an absorbent paper. Serve.
