UPMA PRE-MIX

Ingredients

2 cups semolina (rawa)
¼ cup ghee
4 green chillies, chopped
20 curry leaves
1 tsp mustard seeds
½ tsp asafoetida (hing)
¼ cup onion flakes
4½ tsps salt
2 tsps powdered sugar
Garnish
1 green chilli, slit and fried
2-3 fried curry leaves

Method

1. Dry roast semolina till golden brown on a non-stick pan. Transfer into a wide bowl and allow to cool to room temperature.
2. heat ghee in a non-stick pan same, add green chillies chopped and sauté for a few seconds or till they are crisp. Add curry leaves and sauté till they crisp up. Drain on an absorbent paper.
3. In the same pan, add mustard seeds, asafoetida, let the seeds splutter. Take them off the heat and allow to cool to room temperature.
4. In a large bowl, transfer the roasted semolina, fried curry leaves and green chillies. Add onion flakes and salt, powdered sugar and the mustard seeds mixture. Mix till well combined.
5. Transfer into an air tight container and store up to 6-8 days.
6. For making upma, take ½ cup of the prepared mixture in a microwave safe ait right container and add 1 ¼ cups boiling water, mix well. Cover and microwave on high for 2 minutes.
7. Transfer on a serving plate, garnish with fried slit green chilli and fried curry leaves. Serve hot.
