Ube Funnel Cake | Good Times with Jen | Tastemade

Try this fun, colorful twist on funnel cakes made with everyone's favorite purple yam, ube!

Ingredients:

1 ¼ cup milk
¾ cup ube (purple yam) peeled, cooked, mashed
1 egg
1 tbsp sugar
1 tsp vanilla
1 ½ cups flour
2 tsp baking powder
Pinch of salt
Juice of 1 lemon

Toppings:

Shredded coconut
Powdered sugar

Steps:

In a bowl, combine egg, sugar, ube, and vanilla. In a separate bowl, combine flour, salt, and baking powder. Add the wet mixture into the flour mixture and mix until smooth.
Heat oil to 350°F. Pour batter into a funnel and close the opening with your finger or funnel stopper. Release the batter from the funnel and pour batter into a circular motion, and then zig-zag to fill in the empty spaces and stop flow. Fry 3 to 4 at a time, until slightly puffed and golden on all sides.
Remove, drain on a rack or paper towel, and sprinkle with powdered sugar and shredded coconut. Serve immediately.
