Try this fun, colorful twist on funnel cakes made with everyone's favorite purple yam, ube! Ingredients:1 ¼ cup milk¾ cup ube (purple yam) peeled, cooked, mashed1 egg1 tbsp sugar1 tsp vanilla1 ½ cups flour2 tsp baking powderPinch of saltJuice of 1 lemonToppings:Shredded coconutPowdered sugarSteps:In a bowl, combine egg, sugar, ube, and vanilla. In a separate bowl, combine flour, salt, and baking powder. Add the wet mixture into the flour mixture and mix until smooth. Heat oil to 350°F. Pour batter into a funnel and close the opening with your finger or funnel stopper. Release the batter from the funnel and pour batter into a circular motion, and then zig-zag to fill in the empty spaces and stop flow. Fry 3 to 4 at a time, until slightly puffed and golden on all sides.Remove, drain on a rack or paper towel, and sprinkle with powdered sugar and shredded coconut.
