TURKISH RICE SOUP WITH POTATO RECIPE I Uses only a few ingredients but amazingly delicious

In this episode, Id like to share with you a very delicious soup recipe. It is called Rice Soup in Kayseri region. But we usually call it Kayseri Soup at home, because I learned this recipe from my friends, who are from Kayseri. It's amazingly delicious, uses only a few ingredients, and really easy to make. INGREDIENTS (serves 4-6)
1 medium potato
1 long green pepper (sweet)
3 heaping tbsp uncooked rice
1 heaping tbsp tomato paste
1 tbsp butter, 1 tbsp olive oil
Dried mint flakes, red sweet paprika
1/2 tsp granulated sugar
Salt&pepper
6 cups water

DIRECTIONS
Cut off the stem of pepper, remove and discard the seeds, then rinse.
Cut into tiny cubes.
Peel and rinse potato.
Slice thinly.
Then cut into fine cubes, about the size of chickpeas.
Combine 1 tbsp butter and 1 tbsp olive oil in a pan.
Heat over medium low heat.
Once sizzling, sprinkle 1 leveled tsp dried mint and 1 leveled tsp sweet paprika.
Cook for about 30 seconds, stirring constantly.
Add tomato paste, mix well.
Add 1/2 cup water and mix well, making sure there are no lumps.
Add the potato and green pepper.
Mix well, making sure everything is covered with the sauce.
Cook for about 1 minute.
Then add 5.5 cups hot water, mix.
Bring to a boil over medium high heat.
Sprinkle 1 leveled tsp salt, 1/2 tsp sugar and a pinch of pepper.
Add 3 heaping tbsp rice, mix.
Reduce heat to the lowest possible setting and cover, leaving the lid slightly ajar.
Cook for about 25 minutes, or until the potato is very tender.
Make sure to mix occasionally, so that the rice doesn't stick to the bottom of the pan.
When the time is up, check for doneness and seasoning.
Season to taste.
Turn off the heat, and let cool for about 10 minutes.
Transfer to a serving bowl and enjoy!
This is a very comforting soup, and so easy to make!
