A TURKISH CLASSIC 'ELMALI KURABIYE' - Apple Cookies With Cinnamon and Walnuts - 11 ways

In this episode, I'd like to share with you an amazing cookie recipe. I only bake them once or twice a year, because they are dangerously delicious :) Also, I tried to show 11 ways to form the cookies, just to give an idea. INGREDIENTS

DOUGH
3 - 1/2 cups flour
250 gr. (8.82 oz) butter at room temp
4 real tablespoonful plain yogurt
1/2 cup powdered sugar
1 tsp baking powder
1 pack vanilla sugar (1 tbsp)
A pinch of salt

FILLING
3 large sour apples (700 gr.)
(I use 'Granny Smith' apples)
1/2 cup chopped walnuts
1/2 cup granulated sugar
1 tsp cinnamon
A pinch of salt

DIRECTIONS
For the filling: In a pan, toast the walnuts for about 3-4 minutes over medium heat, stirring constantly.
Transfer into a bowl, let the pan cool.
Peel and core the apples, then grate.
Transfer apples into the pan, add 1/2 cup sugar and a pinch of salt.
Cook over medium low heat, stirring occasionally, until they release their juices and reabsorb them, for about 9-10 minutes.
Turn off the heat, let cool.
Meanwhile for the dough: Sift the flour, set aside.
Combine the butter and yogurt in a big bowl.
Sift the powdered sugar, baking powder and vanilla on top.
Sprinkle a pinch of salt and knead until well combined.
Add flour in 2-3 batches and knead until combined.
Make sure to work fast and not to knead more than needed.
It should be a soft and only slightly sticky dough.
You may need to use a little more or less flour, depending on how thick the yogurt is.
Cover the bowl with plastic wrap, set aside until needed.
Once the apples are cool, add cinnamon and walnuts, mix well.
To form the cookies:
SHAPE 1: Tier off walnut size pieces of dough, form a ball then flatten.
Place 1 tsp filling in the middle and fold to make a half-moon.
Gently prick the edges with a fork.
SHAPE 2: Tier off walnut size pieces of dough, form a ball, then flatten.
Spread 1 tsp filling in the middle, lengthwise.
Fold two edges into the middle, over the filling and pinch well.
SHAPE 3: Divide dough into orange- size portions.
Also divide the filling into dough numbered portions.
Roll one portion dough on parchment paper with a rolling pin, into a round shape.
Until you reach about the size of a medium pizza.
Then cut into 8 wedges, like pizza.
Take one portion filling, divide and spread to outer edge of each wedge, and roll.
You can also make some other shapes, as seen in the video.
Bake cookies in the preheated oven, 170C (340F) for about 25-30 minutes or until lightly browned on the bottom.
Dust with powdered sugar while they are still hot.
Allow ELMALI KURABIYE to cool on the tray, on a cooling rack.
Repeat the same until all is used.
You can dust with powdered sugar once again, when they are cool.
I also tried to freeze them, you definitely can.
Just make sure to to dust with powdered sugar when defrosted, not after baking.
