Turiya paatra features an unusual combination of ridge gourd and paatra.Ingredients Quantity Turai 1 no. (big) Mustard seeds 1/2 tspCumin seeds 1/2 tspHing (Asafoetida) 1/2 tspTurmeric 1/2 tspCoriander powder 1/2 tspGreen chili paste 1/2 tspPatra (Alu wadi) 5-6 nosOil 1 1/2 tbpsFor green paste:Fresh coriander chopped 1 cupGrated coconut 1 cupGarlic pods 8- 10Ginger 1/2 inchLemon juice 1/2 lemonSugar 1 tspSalt to tasteWater as requiredMethod:1. Wash, peeled and cut the turai into cube size. Keep it aside.2. Take a Blending jar, add Coriander leaves, grated coconut, garlic, ginger, lemon juice, sugar, salt and some water and grind to a smooth paste.3. Heat oil in a pan; add mustard seeds, cumin seeds, hing, grinded green paste, salt, turmeric powder, coriander powder, green chilli paste, turai cubes, mix well.4. Cover and cook for 4-5 min.5. Add Patra (alu wadi), mix well and cook for 1 min.6.
