Traditional Sakkara Pongal with a twist by Meenama! Thinai/Foxtail Millet Sakkara Pongal!

Thinai Sakkara Pongal
Ingredients:
Thinai/Foxtail Millets - 1 cup
Mung Dal - cup
Ghee - keep ready cup
Milk - lit
Jaggery powder - 1 cups
Cashews, almonds, raisins, kishmish - as reqd
Fresh coconut- cup
Cardamom - 4
Saffron - few strands (optional)
Method:
Wash and soak Thinai for at least 3 hrs
Then, dry roast mung lightly till flavour emanates
Take a cooker or any thick vessel
Add 3 cups of water to it
Allow to boil
When the water is sizzling add the mung dal and the drained Thinai to it
Give it a good mix
When the Thinai and dal are boiling together, add boiling milk little by little
Simmer flame and cook till the Thinai and dal are boiled well
If using pressure cooker, once everything is boiling, add just cup of boiling milk, simmer the flame to lowest and close the pressure cooker with its lid properly
Fix the weight valve
Time the cooker for 5 whistles or 8 to 10 mins
Switch off pressure cooker and wait for pressure to subside
More ghee needs to be added if pressure cooking
For other cookware, keep stirring occasionally till Thinai and dal cooked well
Now, its time to add the jaggery powder
Add it and stir together
Cook till everything combines well
Add few tbsp of ghee if reqd
Add cardamom powder
Add saffron strands
Meanwhile, in a pan add tbsp ghee
Add cashews & almonds
Roast till light golden
Add raisins & kishmish
Roast till they balloon up
Add fresh coconut and fry till light golden
Add entire fry fruits to the Sizzling Thinai Sakkara Pongal
