#sujanfunkitchen is here with #Meenama s #traditional recipe of #sakkaraipongal made out of Thinai or Foxtail Millets..Thinai Sakkara Pongal Ingredients:Thinai/Foxtail Millets - 1 cupMung Dal - cupGhee - keep ready cupMilk - litJaggery powder - 1 cups Cashews, almonds, raisins, kishmish - as reqdFresh coconut- cupCardamom - 4Saffron - few strands (optional)Method:Wash and soak Thinai for at least 3 hrs Then, dry roast mung lightly till flavour emanates Take a cooker or any thick vesselAdd 3 cups of water to itAllow to boilWhen the water is sizzling add the mung dal and the drained Thinai to itGive it a good mixWhen the Thinai and dal are boiling together, add boiling milk little by littleSimmer flame and cook till the Thinai and dal are boiled wellIf using pressure cooker, once everything is boiling, add just cup of boiling milk, simmer the flame to lowest and close the pressure cooker with its lid properly Fix the weight valveTime the cooker for 5 whistles or 8 to 10 minsSwitch off pressure cooker and wait for pressure to subsideMore ghee needs to be added if pressure cookingFor other cookware, keep stirring occasionally till Thinai and dal cooked wellNow, its time to add the jaggery powderAdd it and stir together Cook till everything combines wellAdd few tbsp of ghee if reqdAdd cardamom powderAdd saffron strandsMeanwhile, in a pan add tbsp gheeAdd cashews & almondsRoast till light goldenAdd raisins & kishmishRoast till they balloon upAdd fresh coconut and fry till light goldenAdd entire fry fruits to the Sizzling Thinai Sakkara PongalEnjoy with friends and family
