#sujanfunkitchen is here with #Pongal festivities- #Meenama makes #AamaVadai & #PooranPoli #Vada #Poli #Pongal Boli:Ingredients for Poli outer covering or dough:Maida - 1 and cupTurmeric powder - tspSalt - a pinchAny flavourless oil - 4 or 5 tbspsMethod to make Poorna Boli dough:Take a wide bowl and add the maidaAdd the turmeric and saltAdding water little by little make a doughWhen the dough is almost done add few tsps of oil and start kneadingKnead till the Boli dough is soft and smoothPour few tbsp of oil into a bowl and place the Boli dough into the oilClose it and allow a resting time for few hrsIngredients for Pooran or PoornamChana dal - 1 cupPowdered jaggery - 1 cupFresh coconut - cupCardamom - 4Ghee as reqdMethod:Wash and soak dal for at least 30 mins so that the dal cooks fastDrain the water and pressure cook the chana dal adding just enough water to cover the dalThe cooked dal should be such that we can mash it easilyAllow it to come to room temperature Grind the cooked chana dal into a smooth pulpy pasteAdd the freshly grated coconut too at some stage of grindingAdd 4 cardamoms without peel Grind everything together to a smooth Poornam or PooranIn a heavy pan, add the jaggery powderAdd just a small quantity of water into itKeep cooking till jaggery meltsAdd the ground Pooran or Poornam paste into the jaggery solutionKeep cooking till the Pooran gets thickAdd 1 tsp ghee to make it non stickyHow to make Pooran Poli or Poornam Boli:Make equal size roundels from the PoornamThe dough would be ready now - divide them into roundels slightly bigger than the Poornam roundelsGrease a banana leaf with oil Grease your palm tooTake a Boli dough roundel and pat it out Place a Poornam roundel on itPull the dough over Poornam and close entirelyPat the stuffed roundel with your palms till its spread out evenlyHeat a tavaSmear ghee/oil in the tavaPlace the banana leaf with the Poornam Boli over the TavaAfter a few seconds carefully remove the banana leaf awayToast the Poornam Boli on both sides with ghee/oil Serve hotAama VadaiIngredients for grinding:Tur dal - 1 cupUrad dal - cupRed chillies - 4 or 5Green chillies - 2Jeera - tspSOAK CUP CHANA DAL SEPARATELY - NOT TO BE GROUNDMethod:Wash the dals and soak for st least 2 hours all the ingredients except jeeraDrain completely from waterAdd the jeeraGrind in blender into a coarse Aama Vadai mixIngredients:Chana dal - cupGreen chillies - 3Ginger - 2 inchesAsaefotida - tspSalt to tasteCurry leaves as reqdCoriander leaves as reqdOil for deep frying Method:Drain the chana dal from waterChop green chillies, ginger, curry leaves and corianderIn a wide dish, add the ground Aama Vadai mix from the blenderAdd the drained chana dalAdd asaefotida Add all the chopped vegetables Add salt to tasteHeat oil for deep fryingShape Aama Vada Mix into roundels and pat into Vadai Deep fry the Aama Vadai till golden on both sideEnjoy the delicacy hot
