TOMATO FRIED RICEIngredients2 medium tomatoes1 cup short grain rice, soaked 6-8 French beans1 spring onion¼ cup sweet corn kernels1 tbsp oil1 tsp finely chopped garlicSalt to taste½ tsp light soy sauceMethod1. Boil sufficient water in a deep non-stick pan, add 1 cup soaked short grain rice and cook for 6-8 minutes.2. Meanwhile, finely chop French beans and spring onion with the greens. Make a cross slit on the bottom of tomatoes.3. Drain the rice and spread on a large plate. Set aside.4. Heat sufficient water in another non-stick deep pan, add the tomatoes and blanch for 45 seconds. Drain into ice cold water, peel the tomatoes, deseed and finely chop them.5. Add sweet corn kernels and blanch for 2-3 minutes. Add beans and blanch for 1 minute, drain into ice cold water.6. Heat oil in a non-stick wok, add garlic, and sauté till golden brown. Add spring onion whites and mix well. Add blanched vegetables and chopped tomatoes and sauté for 1-2 minutes. 7. Add cooked rice, salt and light soy sauce and mix well. Cook for 1 minute and take the pan off the heat.8. Transfer the fried rice into a serving bowl, garnish with chopped spring onion greens and serve.
