TOMATO COCONUT SOUP OIL FREE RAW FOOD VEGAN RECIPE

Start the Chunky portion a little over an hour before meal time (maybe 20 mins for chopping and then you'll need 1 hour dehydrating so schedule prep time as needed):

1/2 cup frozen from fresh peas
1 cup frozen from fresh cauliflower
1 cup frozen from fresh diced carrots
1/2 cup fresh diced cherry tomatoes
1/4 cup fresh diced red onion
(and other veggies of your choice if you like! Options include frozen from fresh sunchokes, asparagus, leeks, yellow onion, green bean, also fresh green onion, mushroom or anything you like)

Spread on a mesh dehydrator sheet and dehydrate for about an hour.

Right before eating, blend the soup base:

5 pitted dates
1 fresh tomato
1 cup fresh young coconut jelly
2 green onion stalks
2 cloves of garlic
1 tbsp apple cider vinegar
1 tbsp miso paste
1 tsp chia seeds
1/2 tsp onion powder
2 tbsp tomato powder
1/4 tsp curry powder
1/8 tsp turmeric powder
1/8 tsp chipotle powder
1/8 tsp Marash chili flakes (or your choice of spicy chili)
2 cups water

Blend on high-speed for about 2 minutes or until slightly warmed. While the soup base is blending, take the veggies out of the dehydrator and put them in a large soup bowl. When the soup base is ready, pour over the veggies, mix and top with dried chives, parsley, red pepper flakes and any other toppings you like!
