These crispy baked brown bread roundels topped with oriental style tofu stir fry are great as a healthy starter for a get-together.TOFU BREAD COINS Ingredients150 grams tofu, chopped6brown bread slices, edges trimmed Butter as required 1 teaspoon oil 3 tablespoons finely chopped babycorn 2-3 tablespoons finely chopped French beans½ medium green capsicum, finely chopped ¼ teaspoon dried ginger powder Crushed black peppercorns to tasteA pinch of sugarSalt to taste½ tablespoon red chilli sauce 1 teaspoon soy sauce2 tablespoons shredded bok choy Microgreens for garnishingMethod1. Preheat oven to 180° C.2. To prepare coins, cut bread slices into roundels using a small size cookie cutter. 3. Apply some butter on each coin and place on a baking tray. 4. Put the tray into the preheated oven and toast for 5-7 minutes.5. Heat oil in a non-stick pan. Add babycorn and sauté till golden brown. Add French beans and capsicum and sauté for 1 minute. 6. Add dried ginger powder, crushed peppercorns, sugar, salt, chilli sauce and soy sauce, mix and cook for 1 minute. Add 1-2 tablespoons water, mix and cook for 1-2 minutes.7. Add tofu and pok choy, mix and cook for 1 minute. Transfer in a bowl. 8. Place coins on a serving platter and put some tofu mixture on top. 9. Serve hot garnished with some microgreens.
