Toffee Sheera | Cooking Classy with Chef Afraz | Sanjeev Kapoor Khazana

A toffee flavoured sheera! It tastes even better than it sounds - try it for yourself.

TOFFEE SHEERA

Ingredients

¾ cup semolina (rava)
2 tablespoons ghee
1 cup sugar
2-3 almonds
3-4 pistachios
Toffee sauce
½ cup sugar
¼ cup fresh cream
2 teaspoons butter

Method

1. Heat ghee in a non-stick pan and let it melt. Add semolina and roast on medium heat till light golden brown, stirring continuously.
2. To prepare sugar syrup, heat 1 cup water in another non-stick pan. Add sugar, mix and cook till it melts.
3. Add hot sugar syrup to roasted semolina, mix, cover and cook till semolina absorbs the syrup and semolina is done.
4. To prepare toffee sauce, heat sugar in another non-stick pan and cook till it caramelizes, swirl to mix. Add cream, remove from heat and whisk immediately. Add butter and whisk well.
5. Add half of toffee sauce to cooked semolina, reserving the remaining and mix well. This is sheera.
6. Slice almonds and pistachios.
7. Take sheera in a small bowl, press to level it out and demould on a shallow serving platter.
8. Drizzle some of the remaining toffee sauce on top and put some pistachio slices and almond slices. Put few drops of toffee sauce on the platter and garnish with remaining pistachio slices and almond slices.
9. Serve immediately.
