TIRAMISU - No egg

In this episode, I'd like to share with you, my version of 'Tiramisu' recipe. 'Tira mi su' literally means: 'pick me up'. In most Tiramisu recipes you'll find egg yolks or raw eggs. But raw eggs aren't my thing, so in this recipe I choice to use whipping cream instead of egg whites. It tastes so good, and takes only 15 minutes to prepare. Super easy, super tasty :)

INGREDIENTS:

2 packages- 200 gr. (7oz) Italian Lady Fingers biscuits
400 gr. (14 oz) Mascarpone or cream cheese (at room temp)
3 tbsp butter (at room temp)
1 cup whipping cream (cold)
3/4 cup powdered sugar
2 tbsp lemon juice
1 package Vanilla sugar or 1 tsp vanillin extract
2 tbsp Nescafe
3 tbsp Cognac (optional)
1 tbsp granulated sugar
A pinch of salt
Cacao powder
(30x20 cm (12 by 8-inch) rectangular dish)

DIRECTIONS:

Pour the cold cream into a mixing bowl.
Add a pinch of salt and 1 tsp powdered sugar.
Mix and beat on low speed until light and fluffy for about 2-3 minutes and set aside.
Combine cheese and butter in another bowl.
Add the vanillin extract if using, or sift vanilla sugar and
powdered sugar then add the lemon juice and beat well.
Add the whipped cream using a spatula.
Beat until smooth then scrape the sides with a spatula and refrigerate until needed.
Pour 2 cups of espresso into a bowl, or instead (carefully) 1 cup of hot water and2 tbsp instant coffee.
Add 1 tbsp of granulated sugar, 3 tbsp of cognac if desired
and mix.
When sugar dissolves, pour 1 cup of room temp water and
mix again.
Arrange half of the biscuits in one single layer on the bottom
of the dish.
One at a time, dip the lady fingers in the coffee mix for only
3 times by doing it quickly.
Then spoon half the cream mixture over the lady fingers, spread and smooth the top with a spatula.
Repeat process with another layer of lady fingers and cream mix.
Cover with plastic wrap and refrigerate for at least 6 hours or overnight before serving.
Last but not least, dust with cocoa powder before serving then slice and enjoy :)
Use a wet paper towel to clean the dish if needed.
