As the name suggests, this recipe works great for carrying it in a tiffin box. Simple and absolutely delicious.

TIFFIN PULAO

Ingredients

1½ cups Daawat Pulav Basmati Rice
2 tbsps oil
1 tsp mustard seeds
1 tsp cumin seeds
2-3 green chillies, chopped
¼ cup raw peanuts
1 medium carrot, cut into small cubes
1 medium potato, cut into small cubes
¼ tsp turmeric powder
¼ tsp red chilli powder
Salt to taste
¼ cup green peas
Chopped fresh coriander leaves for garnish
Kachumber to serve
Roasted papads to serve

Method

1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times. Add fresh water, soak for 20-30 minutes and drain.
2. Heat oil in a pressure cooker, add mustard seeds and cumin seeds and let them splutter. Add green chillies, raw peanuts, carrot and potato and sauté for 2-3 minutes.
3. Add turmeric powder and red chilli powder and mix well. Cook for 1 minute.
4. Add soaked rice, salt, and green peas and mix. Add 3 cups water, mix, cover and cook under pressure till 2 whistles.
5. Switch the heat off, open the cooker once the pressure reduces completely and transfer the rice into a serving plate.
6. Garnish with coriander sprig and serve hot with kachumber and roasted papads.
