Thekua Recipe also called Khajur, Khajuria, Thikari or khamoni

Ingredients
Wheat flour – 2 cups (300 grams)
Jaggery - ¾ cup (150 grams)
Raw coconut - ½ cup (50 grams) (grated)
Oil – to fry thekua
Ghee – 2 tbsp
Green cardamom – 5 or ½ tsp powder

Directions
Getting ready:
Peel green cardamom and crush its seeds into fine powder using mortar pestle.Take water in a vessel followed by jaggery. Place it on flame and cook the jaggery until it dissolves completely. After a while, when jaggery dissolves, then turn off the flame and strain the syrup through a sieve in a bowl to remove impurities.Add ghee into the jaggery syrup and mix well. Let it cool down slightly. Take wheat flour in a big mixing bowl and add green cardamom powder and coconut into it. Add jaggery syrup in small portions and knead stiff dough. Dough is ready. Take a thekua mould to make thekua. Pinch some dough and roll it into cylindrical peda. Place it on the mould and and press it gently with the palm to make long shaped thekua. Make a round peda of some dough, place it on the mould and press it with the palm to make round thekua. Place them on a plate and likewise make the rest of the thekua from the remaining dough.Place a wok on flame and pour enough oil into it to deep fry the thekua. When oil becomes medium hot, gently slide 6-7 or as many thekua as possible into it. Keep the flame medium.
Once the thekua gets fried from beneath, flip their sides and fry them until they get golden brown from both the sides. Thekua are fried aptly, drain out them on kitchen paper towel placed over a plate. Fry the rest of the thekua as well. Thekua are now ready.Serve these crusty and tempting thekua along with piping hot cup of tea or coffee or have them as it is. When they cools down completely, store them in an air-tight container and relish eating for about a month.

Suggestions
You can add cashews, raisins, dates or other dry fruits into thekua.
If you don't have mould then use sieve, plastic basket, grater or anything else to make design on the thekua.
