THE WORLD FAMOUS STOLLEN | The perfect guide for Stollen (EP247) | Kitchen Princess Bamboo

Today I'm going to be making, Stollen.

I used to bake hundreds of Stollen at this time of the year when I run a pastry shop.

My Stollen is not the brioche-like fluffy style, it's moist and dense and has a lot of texture and flavor.

You will need a lot of ingredients to make the best Stollen, but it's just once a year thing and definitely worth it.

【2 small stollen (280g)+1 large stollen(450g)】
・the sponge dough
200g bread dough
10g instant dry yeast
1g salt
140g water
・Stollen dough
200g Bread flour
40g sugar
5g salt
3 teaspoons (12g) spices (2 ts cinnamon,1/2 ts ginger, 1/2 ts all-spice, 1/4 ts nutmeg, 1/4 clove, dash of 5 spice powder, dash of freshly ground black pepper)
120g almond paste for baking (60g almond powder, 60g egg white)
120g unsalted butter
100g preserved dried fruits (chopped assorted dried fruits preserved in dark rum and simple syrup)
100g roasted walnut
・Almond paste for the filling
200g almond powder
200g sugar
20g honey
1/3cup (80ml) water
・Finishig
200g unsalted butter
100g white sugar
100g powdered sugar
20~30g vanilla sugar (30g vanilla pod+ 30g white sugar)※optional
