Crepes have an endless supply of delectable uses! I've never actually ordered a blintz before and after making them myself, I'll be looking very carefully at cafe menus for them. I mean think of the possibilities with these things. So many fillings..so many toppings..so many different ways to make them golden brown and crispy! 1 cups all purpose flour
1 tbsp sugar
1 whole egg
1 cup milk
pinch of salt

Filing:
1 cup ricotta cheese
1/4 cup sugar
1 egg yolk
1 tsp lemon zest
1 pinch of salt

powdered sugar to finish
