Fudgy Avocado Brownies
Ingredients:
cup cocoa powder
cup banana, mashed
cup maple syrup
plus 2 Tbsp. monk fruit sweetener
2 Tbsp. butter, melted
2 eggs, beaten
cup coconut flour
1 tsp. Vanilla extract
tsp. Salt
heaping cup of chocolate chips, 63% or more cocoa
1 Tbsp. gelatin
1 medium avocado
More chips to sprinkle on top of brownies

Directions:
Prepare an 8 x 8 baking dish by first spraying the bottom and sides of the dish with some sort of cooking spray or even just rubbing it with oil. Push a square piece of parchment paper into the dish and trim off any excess paper. But be sure to leave enough paper hanging over the edge to pick up the brownies to ease them out of the dish.

Preheat the oven to 350 degrees F.

Place the avocado, banana, vanilla, and the maple syrup into a food processor and process until smooth. Scrape down the sides as needed.

In a large mixing bowl, combine all the dry ingredients: cocoa powder, monk fruit sweetener, coconut flour, gelatin, salt, and the baking soda. Use a whisk to combine.

Crack the eggs in a separate bowl in case a shell gets in it. This will make it easy to get out any stray shell pieces that break off. Whisk the eggs and then add them to the dry ingredients. Stir until just incorporated. The batter will be dry.

Then add the avocado mixture to the dry mixture and stir to combine. Add the cup chocolate chips and fold in.

Pour this mixture into the prepared baking dish and smooth out with a spatula. Top with more chocolate chips.

Bake at 350 degrees F. for 40 min. Check for doneness by inserting a toothpick. You want the toothpick to come out mostly dry but if its a little wet thats okay.

Cool for 10 minutes and then use the parchment paper to remove the brownies from the dish. Cut into squares and serve. These are great warm or room temperature. They will be more chewy after they have cooled. This would be great served with my chocolate pudding fluff. https://bit.ly/3gQw9p0
