Today's version is a more popular style in Japan, loved by all generations.
It's my all-time favorite, which has a kind of nostalgic flavor.

200g cake flour
10g sugar
4g salt
150g unsalted butter
75ml icy cold water
〈Apple pie filling〉
500g apple
1 tbs lemon juice
100g sugar
〈Genoise〉
3 large eggs
120g sugar
100g cale flour
30g vegetable oil
