Thavala Vadai is a #traditional recipe and my mother in law can do it even if woken up from a deep sleep state! It’s an #oilfree recipe; well, almost oil free. The simplicity of the recipe is intriguing - just a few ingredients from our pantry and you have a interesting and nutritious snack ready.

Thavala Vada
iIngredients:
Raw rice - 2 cups
Tur dal - ¼ cup
Chana dal - ¼ cup
Black pepper - 1 tsp
Cumin seeds - 1 tsp
Green chillies - 4
Ginger - 2 inches
Curry leaves to taste
Mustard seeds - 1 tsp
Asaefotida
Oil as required
Salt to taste
Method:
Powder raw rice, dals, black pepper and cumin seeds in a mixer jar - keep aside
Crush the green chillies and ginger or chop them finely
Hear some oil in a heavy pan
Splutter mustard seeds in it
Add 1 tsp chana dal and fry till golden
Add asafotida
Now add the crushed green chillies and ginger and saute
Add 3 or 3 ½ cups of water and allow to boil
Add salt to taste
Now add the powdered rice-dal mix and cook together till everything comes together
Switch off flame and close the Thavala Vadai mix tightly for few minutes
Now, divide into equal sized portions and pat into vadai or cutlets
Heat a dosa griddle and spread with oil
Place the flattened Thavalai Vadais on the griddle and cook covered over medium flame
When golden underneath, flip sides and cook UNCOVERED now till golden
Serve piping hot Thavalai Vadais to your friends and family
