Since it does not involve boiling vegetables, it can be tossed up quite soon -- you just need to spare enough time for the rice to cook, and voila a delectable meal is ready on the table! Serve hot with a side dish or just some tangy sauce. Preparation time: 15 minutes Cooking time: 15 minutes Serves 4. 1 cup rice (basmati), soaked for 30 minutes and drained2 tsp oil1 bayleaf (tejpatta)Salt to taste1 bunch lemon grass (hari chai ki patti)¼ cup finely chopped mint leaves (phudina) ¼ cup finely chopped basil¼ cup finely chopped coriander (dhania)1 tbsp finely chopped green chillies¼ cup coconut milk (nariyal ka doodh)1. Heat the oil in a deep pan, add the bayleaf and sauté on a medium flame for 30 seconds.2. Add the rice, mix well and sauté on a medium flame for 1 to 2 minutes. 3. Add 1¾ cups of hot water, salt, lemon grass bunch, mix well and cook on a medium flame for 8 to 10 minutes or till the rice is 95% cooked.4. Remove the lemon grass bunch and discard it.5. Add the mint leaves, basil, coriander, green chillies and coconut milk and mix well, cover and cook on a slow flame for 2 to 3 minutes, while stirring occasionally. Serve hot.
