Ingredients:
1 cup fine semolina (suji/sooji/rava)
1/2 tsp salt (or to taste)
1/2 cup water (or as needed)
Spices for flavour
Oil for deep-frying

Instructions:
In a mixing bowl, combine the semolina and salt
1.Add water gradually and knead the mixture to form a smooth and pliable dough.
2. Divide the dough into small equal portions and roll each portion into a ball.
3. Roll out each ball into a thin circle on a lightly floured surface. Cut the circle into diamond shapes using a knife or a cookie cutter.
4. Heat oil in a deep frying pan on medium heat.

6. Remove the fried suji diamond snacks from the oil using a slotted spoon and place them on a paper towel to remove excess oil.

8. Add masalas of your choice to give it a flavor (like jeera powder chaat masala, red chili powder etc.)
