This Street-style Tawa Pulao with extremely flavourful spices and selected veggies is a must-try for you!

TAWA PULAO

Ingredients

3 cups cooked Basmati rice
1 tablespoon oil
1 medium onion, finely chopped
1 tablespoon ginger-garlic paste
1 tablespoon Kashmiri dried red chilli paste
2 teaspoons pav bhaji masala
½ cup tomato puree
Salt to taste
1 medium green capsicum, chopped
3-4 tablespoons green peas
1 medium tomato, deseeded and cut into 1 inch cubes
1 tablespoon chopped fresh coriander leaves
Fresh coriander sprig for garnishing

Method

1. Heat oil in a non-stick pan. Add cumin seeds and when it changes colour, add onion and sauté till it turns light golden brown.
2. Add ginger-garlic paste and red chilli paste and sauté for 1 minute. Add 3-4 tablespoons water, mix and cook for 1-2 minutes or till the oil separates.
3. Add 1½ teaspoons pav bhaji masala and mix. Add tomato puree and salt, mix and cook for 5-10 minutes or till the oil separates.
4. Add green capsicum, green peas, tomatoes, coriander leaves, rice, salt and remaining pav bhaji masala, mix, cover and cook for 2-3 minutes.
5. Serve hot garnished with coriander sprig.
