Tawa Chicken with Malabar Paratha

Ingredients for Chicken:
Chicken Fillets 4-6
Yogurt ½ cup
Cream 2 tbsp
Ginger Garlic Paste 1 tbsp
Green Chili Paste ½ tbsp
Salt 1½ tsp
Red Chili Powder 1 tsp
Turmeric powder 1 tsp
Paprika Powder ½ tsp
Black pepper Powder ½ tsp
Cumin Powder ½ tsp
Coriander Powder 2 tsp
Lemon Juice 1 tbsp
Hot Sauce 1 tbsp
Chaat Masala 1 tsp
Powdered Sugar ½ tbsp
Oil 2 tbsp
Oil (for frying) 3-4 tbsp
Milk ¼ cup
Leftover marinate 2 tbsp

Ingredients for Malabar Paratha:
All-purpose flour 3 cups
Salt 1½ tsp
Ghee 3 tbsp
Water (lukewarm) as required
Butter (melted) as required
All-purpose flour as required
Oil (for frying) as required

Fresh Coriander (for garnishing) as required
Green Chilies (for garnishing) as required

Directions for
1. Cut chicken breast into two thin filets. Keep aside
2. In a bowl add chicken breast, yogurt, cream, ginger garlic paste, green chili paste, salt, red chili powder, turmeric powder, paprika powder, black pepper powder, cumin powder, coriander powder, lemon juice, hot sauce, chaat masala, powdered sugar, oil including and whisk until all the ingredients have incorporated. Add chicken breast and marinate for 30 minutes.
3. Separate 2 tbsp of marinate in a separate bowl and add milk in it. Mix it well. your milk mixture is ready. Set aside.
4. Add oil to a preheated griddle. Place marinated chicken fillets and cook from both sides until color changes.
5. Chop into small chunks. Gradually add prepared milk mixture anytime the masala dries out. Take off the flame and set aside. Your Tawa Chicken is ready.
Directions for Malabar Paratha Preparation:
6. In a bowl add flour, salt, and ghee into a bowl. Mix well. Then add water and knead into a smooth dough.
7. Cover with damp cloth and rest for 30 minutes. Cut the dough into 4 equal parts. Make dough balls of each part.
8. Spread oil on silicon mat, Take a dough ball and press it with your hands on silicon mat and make a thin see through sheet.
9. Brush with butter and sprinkle flour. Fold it and then roll it giving it a shape of round ball again.
10. Cover and rest again for 10 mins.
11. Press down with hands into a flat disc shape. And cook on a preheated griddle from both sides by adding some oil until cooked through.
12. Transfer to a serving plate. Top with cooked chicken. Garnish with coriander and green chilies. Serve.
